Overnight Pickles



2-3 Pickling cucumbers or regular or english cucumber - I have used all of them before
4 Tbsp vinegar
1 Tbsp dill
2-4 Cloves of garlic
1/2 Tsp salt
10 Peppercorns optional
1/2 -2/3 Cup of water
1 Pint jar or a 2 cup glass bowl

Fill jar up with sliced cucumber
Place everything else in jar
Then top off jar with water
Store in refrigerator

As you can see from my photo I put some carrots in there too:)  I also like cauliflower when I have some.  This helps keep my salty tooth at bay!  I usually make up a fresh batch when I'm chopping up my weekly vegs.
