Spicy Bok Choy

2 Baby heads of bok choy or half of a large one 1/2 Tsp crushed garlic 1/2 Tsp crushed peppers 1 Tbsp water 1 Tbsp liquid braggs aminos Spray pan with olive oil Place garlic and crushed peppers in pan and saute for 1 min.  I like my garlic a little toasted. Then add bok choy, water, and liquid braggs aminos Cook long enough just to heat it.  I prefer mine on the cruncher side. Enjoy:)

Sweet Potato Fries

I used my Chopper  again and saved a ton of time!   1 Sweet potato 1 Tbsp olive oil 1 Tsp garlic powered   Peel skin off of sweet potato Cut into fry lengths or used the Chopper Place in bowl and coat with oil and garlic powered  Place in oven on lightly sprayed cookie sheet ( Homemade Cooking Spray ) for 15 mins at 400   Enjoy:)

My Kitchen Must Haves

  Don't buy cooking spray ever again!  Make your own! Add a little olive oil, put the lid on, and give it a few pumps.    My chopper, it saves so much time on dicing vegetable.  I used the bigger grate for Sweet Potato Fries .  Also, the bigger grate works wonderful for soups too! Big time saver.   I use the smaller grate for peppers and onions.  The other veg in this picture, is shredded sweet potatoes for my Salmon Patties (will post soon).

Potato Soup

4 Tbsp of butter 1/3 Cup flour 3 1/2 Cups milk 1/2 Cup shredded cheese 4 Cups of cooked potatoes 1/4 Tsp salt 1/8 Tsp pepper Few slices of bacon (opt) Melt butter, then add flour to make rue Slowly mix milk into rue Then add cheese, cooked potatoes, salt & pepper Top with bacon, cheese, and green onions if you like I had milk that was going bad so my husband and son get potatoes soup and rice pudding ( will post soon) Enjoy:)

Guacamole

2 Avocados 1 Tsp lime juice  2 Garlic clove or 1tsp of crushed garlic 2 Tsp cumin 1/2 -1 Tsp cayenne - Depending on how hot you like it 1/4 Tsp turmeric (opt) - Has many  health benefits  so I like to put it in anything I can 1/4 Tsp garlic salt or regular salt is fine too  1 Small onion 2 Small tomatoes Mash avocados in a bowl Mix everything else in but tomatoes and onion Taste for desired hotness/saltiness, this is where I add more heat:) Then add in diced onion and tomatoes Enjoy:)

Coffee Scrub

Say goodbye to cellulite and varicose veins!  Hello healthy skin! 1/4 Cup coffee 1/4 Cup sugar 1/4 Olive oil ( or any other thinner oil you like)   How it works  : The caffeine and antioxidants in coffee are moderately effective to mitigate the appearance of cellulite in the short term. Just the use of Coffee Scrubs with the squeezing and massaging of the product on the skin helps release toxins and fats held in the skin. As a stimulant, the caffeine in coffee dilates blood vessels, which temporarily tones and tightens tissue and helps with occurrence of varicose veins. Plus, it increases circulation and reduces water retention, both of which may also help smooth the rumpled look of cellulite. Chocolate Fudge Skillet Cake

4 Tbsp butter (I used 2 coconut oil & 2 butter) 1/2 Cup cocoa (I used special dark) 3/4 Cup maple syrup (grade A) 8 Ounces almond butter 2 Eggs 1/2 Tsp baking powder Place 9" cast iron skillet over low heat to melt butter Then add rest of ingredients one at a time but don't let your mixture get to hot, you don't want to cook your eggs Place in oven at 325 and bake for 15-20 mins.  You want to take it out when it still fudgy and soft in the middle because it will cook after you removed it from the oven. Super Yummy!  I couldn't even wait for it to cool off to try:)  My wonderful nieces shared this recipe with me. Enjoy:)

Ranch Dip/Dressing

1/4 Cup greek yogurt 1/4 Cup sour cream 1/4 Cup butter milk or 1/4 cup milk & 1 tsp vinegar 1 Tbsp lemon juice 1/2 Garlic clove or 1 tsp crushed garlic 1.5 Tsp parsley 1 Tsp onion powder 1 Tsp garlic powder 1/2 Tsp dill 1/4 Tsp salt & pepper Sometimes our greek yogurt goes bad before everyone eats it, so I freeze it into cubes.  In this recipe I used two cubes, each cube is two tbsp.  I place it in the refrigerator and stirred it up the next day.    You can also grate the sides of a cucumber and throw that in there too, this make a great cucumber dill dip!  Now if you like spice like me, then add some cayenne pepper and have a southwestern ranch dressing. For dip just start with 2 tbsp of milk instead of 1/4 cup, then add until your desired consistency Enjoy:)

Jerky

  1 lb of ground turkey, beef, or venison 1 Tbsp liquid braggs or soy sauce 1 Tbsp worcestershire sauce 1 Tbsp maple syrup or brown sugar 1/2 Tbsp onion powered 1/2 Tbsp garlic powered   Mix all ingredients in bowl, place in refrigerator to marinate for 8 hours Place in dehydrator for 6-8 hours depending on how soft you want your jerky Then place in oven for 20 mins at 170 degrees to kill bacteria Store in refrigerator when done   My son really likes this recipe.  Try it first, you can always add more salt or soy sauce for a salter taste or more brown sugar if you like it sweeter.     

Overnight Pickles

2-3 Pickling cucumbers or regular or english cucumber - I have used all of them before 4 Tbsp vinegar 1 Tbsp dill 2-4 Cloves of garlic 1/2 Tsp salt 10 Peppercorns optional 1/2 -2/3 Cup of water 1 Pint jar or a 2 cup glass bowl Fill jar up with sliced cucumber Place everything else in jar Then top off jar with water Store in refrigerator As you can see from my photo I put some carrots in there too:)  I also like cauliflower when I have some.  This helps keep my salty tooth at bay!  I usually make up a fresh batch when I'm chopping up my weekly vegs.
